Coconut Kesar Peda was the 1st mithai that I made with my mom. It is quick, easy and tastes so good. I was so proud to serve this mithai to the family as a little girl. As an adult, I realized thats how my mother lured me into the kitchen with super simple but tasty recipes. So following my mother’s subtle ways, I made this mithai with my 10 year old girl earlier this year. Here’s the recipe.
Ingredients
1 cup grated coconut
1 cup Milk powder
1 cup milk
1/3 cup powdered sugar
1tbsp ghee
Few Kesar ( Saffron) threads soaked in a tsp of warm water
Directions
Heat ghee in a pan on medium flame – add coconut, cook for a couple of minutes, then add the milk powder. It should be pretty dry. Cook while constantly stirring, for a couple of minutes, then add 1 cup milk. Cook until all the milk is absorbed by the mixture – about 7-10 minutes. Turn the heat off and let it cool. When the mixture is cool to touch ( room temperature not warm) add the powdered sugar. Mix/ knead the mixture well until smooth.
Roll them into small round balls and then using your thumb, flatten them and give it a thumbprint to give it the classic peda Shape. Add soaked kesar threads on top for garnish.
Tip – Its ok to add a little water from kesar on top, as it adds a beautiful color to the pedas.
